Sous Chef

We are looking for a talented, driven Sous Chef with a high level of restaurant experience and a passion for local Scottish produce to join our kitchen team in beautiful Dunkeld.

We would like to hear from creative chefs who can adapt to daily changes within our walled garden and who can help drive seasonality through our wide food offering. These include a fine dining restaurant, casual pub lunches, beer garden wood-fired pizza shack, outdoor long table dinners cooked over fire, overnight hampers, themed dishes for summer cinema and music events, and many more exciting projects in the pipeline.

We are looking for a committed, people person who loves to inspire and motivate others and help support and nurture a young team. They should be fantastic communicators and problem solvers.

Our menus champion the local produce we are so lucky to be surrounded by in Perthshire to create daily changing menus. You would work closely with our growers at our 5-acre walled garden in Murthly Castle Estate, utilising the bountiful seasonal produce. With game coming from estates within 5 miles, you would be responsible for breaking down whole beasts and game using a nose-to-tail approach. We love to make fresh pasta, breads, charcuterie and pastry as well as sourcing from local artisanal producers. We are constantly working on new ideas and ways to be more self-sufficient, sustainable and ethical in the way we produce, process and present our food offering.

You’ll have the opportunity to work in different environments including our fully equipped indoor kitchen, the outdoor kitchen in our buzzy gardens and a great barbecue set-up overlooking the beautiful River Tay.

Key Responsibilities

  • Running and supervising any section as required within the kitchen to the standards set by the Head Chef.

  • Food preparation — larder, pastry, sauce, fish prep, butchery, sauces, pasta, pizza etc.

  • Maintaining a high standard of cooking, cleanliness and organisation of each section.

  • Be a solid anchor in the kitchen that the junior chefs can look up to for guidance and support, help in their learning and development and delegate in a kind and nurturing manner.

  • Maintaining a positive and proactive attitude, striving to constantly improve knowledge, skill set and performance.

  • Liasing between junior chefs, reporting to head chef any issues or situations with staff that may affect their roles.
